CHEWY GRANOLA AND CRISPY RICE BARS

A cross between a crispy rice cereal square and a granola bar, these no-bake snacks are full of sunflower seeds and dried cranberries.

Yield: Makes 24.

CHEWY GRANOLA AND CRISPY RICE BARS

Ingredients

  • 1 pkg (400 g) marshmallows
  • 1/4 cup salted butter
  • 1 tsp vanilla
  • 4 cups granola
  • 1 1/2 cups crisp rice cereal
  • 1/2 cup sunflower seeds
  • 1/2 cup dried cranberries

Directions

  1. Combine marshmallows and butter in a Dutch oven. Cook over low heat, stirring frequently, until marshmallows are melted.
  2. Remove from heat and stir in vanilla.
  3. Stir in granola, cereal, sunflower seeds and cranberries.
  4. Press mixture into a greased 9x13 inch baking pan.
  5. Cover and refrigerate until firm.
  6. Cut into bars. Wrap bars individually in plastic wrap. Store in a cool dry place for up to 1 week. May be frozen for up to 1 month.
