CHICKEN AND SQUASH PATTIES

These little ground chicken and shredded butternut squash patties are a unique party appetizer. You’ll be surprised by how well they pair with pancake syrup.

CHICKEN AND SQUASH PATTIES

Ingredients

  • 1 1/2 lb (0.75 kg) ground chicken
  • 3/4 cup shredded peeled butternut squash
  • 1/2 cup fine dry bread crumbs
  • 1/4 cup finely chopped onion
  • 1/4 cup chopped fresh parsley
  • 2 tsp grated orange peel
  • 1 tsp paprika
  • 3/4 tsp salt
  • 1/2 tsp freshly ground pepper
  • 1/2 tsp sage, crumbled
  • 1 large egg, beaten
  • 1 tbsp canola oil
  • Maple or pancake syrup*

Directions

  1. Combine chicken, squash, crumbs, onion, parsley, orange peel, paprika, salt, pepper, sage and egg until well blended.
  2. Shape chicken mixture into 40 patties, each about 1 1/2 inches in diameter.
  3. Heat oil in a large nonstick frypan over medium heat.
  4. Cook patties in batches until browned on both sides and completely cooked, about 6 – 8 minutes per side. Serve with syrup.
