These little ground chicken and shredded butternut squash patties are a unique party appetizer. You’ll be surprised by how well they pair with pancake syrup.

CHICKEN AND SQUASH PATTIES
Ingredients
- 1 1/2 lb (0.75 kg) ground chicken
- 3/4 cup shredded peeled butternut squash
- 1/2 cup fine dry bread crumbs
- 1/4 cup finely chopped onion
- 1/4 cup chopped fresh parsley
- 2 tsp grated orange peel
- 1 tsp paprika
- 3/4 tsp salt
- 1/2 tsp freshly ground pepper
- 1/2 tsp sage, crumbled
- 1 large egg, beaten
- 1 tbsp canola oil
- Maple or pancake syrup*
Directions
- Combine chicken, squash, crumbs, onion, parsley, orange peel, paprika, salt, pepper, sage and egg until well blended.
- Shape chicken mixture into 40 patties, each about 1 1/2 inches in diameter.
- Heat oil in a large nonstick frypan over medium heat.
- Cook patties in batches until browned on both sides and completely cooked, about 6 – 8 minutes per side. Serve with syrup.
