CHILI ORANGE PEANUTS

These peanuts are the perfect snack for when you’re craving something that’s sweet, salty and spicy.

Yield: Makes 4 cups.

CHILI ORANGE PEANUTS

Ingredients

  • 1/4 cup granulated sugar
  • 1 1/2 tsp grated orange peel
  • 1 tsp kosher salt
  • 1/4 cup honey
  • 2 tbsp water
  • 1 1/2 tsp sambal oelek
  • 3 cups unsalted roasted blanched peanuts

Directions

  1. Preheat oven to 250°F. Line a rimmed baking sheet with parchment paper.
  2. Combine sugar, orange peel and salt in a large heatproof bowl; set aside.
  3. Combine honey, water and sambal oelek in a large nonstick frypan. Cook over medium heat, swirling occasionally and watching carefully to prevent burning, until mixture is slightly thickened and most of water has evaporated.
  4. Add peanuts and cook, stirring, until peanuts are coated with honey mixture, about 4 minutes.
  5. Transfer peanuts to sugar mixture in bowl and toss to coat. Spread peanuts in a single layer on prepared pan.
  6. Bake for 15 – 20 minutes or until peanuts are lightly browned and richly glazed.
  7. Cool completely in pan on a rack, breaking into clusters as peanuts cool. Store in an airtight container in a cool dry place for up to 1 week.

Tip: Sambal oelek is a chili paste mixture used in Malaysian and Indonesian cooking. Look for it in the Asian section of grocery stores.
