CHIPOTLE BLUE CHEESE BUTTER

This flavoured butter combines the smoky taste of chipotle with the tang of blue cheese. Slice rounds of the cold butter and place them onto hot steaks or other grilled meat or vegetables.

Yield: Makes 1 log.

CHIPOTLE BLUE CHEESE BUTTER

Ingredients

  • ​1 cup salted butter, softened
  • 2 tbsp finely chopped canned chipotle peppers in adobo sauce
  • 2 tbsp crumbled blue cheese
  • 1 1/2 tsp fresh lime juice
  • 1 tsp chopped fresh cilantro
  • 1/4 tsp freshly ground pepper

Directions

  1. Using medium speed of an electric mixer, beat together all ingredients until smooth.
  2. Place mixture on a piece of plastic wrap. Using plastic wrap as an aid, shape mixture into a 1 1/2 x 7 inch log.
  3. Wrap log in plastic wrap and refrigerate for up to 1 week or freeze for up to 2 weeks.
