CHOCOLATE CHIP BANANA MUFFINS

Chocolate and bananas are a classic combo. These tasty muffins make a great portable snack.

CHOCOLATE CHIP BANANA MUFFINS

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp ground ginger
  • 1/4 tsp salt
  • Pinch nutmeg
  • 1 cup mashed ripe bananas
  • 1/2 cup granulated sugar
  • 1/2 cup salted butter, melted
  • 1/4 cup milk (2%)
  • 1 large egg
  • 1 tsp vanilla
  • 3/4 cup mini semi-sweet chocolate chips

Directions

  1. Preheat oven to 350°F.
  2. Combine flour, baking powder, ginger, salt and nutmeg in a bowl.
  3. Stir together bananas, sugar, melted butter, milk, egg and vanilla until blended.
  4. Add banana mixture to flour mixture and stir just until combined. Fold in chocolate chips.
  5. Spoon batter into paper-lined muffin cups, filling cups three-quarters full.
  6. Bake at 350°F for 30 - 35 minutes or until a cake tester inserted in centres comes out clean.
  7. Cool muffins in pan for 5 minutes. Remove from pan and cool on a rack. May be frozen for up to 1 month
