Chocolate Fruit and Nut Bark

We made this chocolate bark festive by adding dried fruit, hazelnuts, and pistachios. Add this delicious sweet treat to your holiday baking tray or give it as a gift from the kitchen.

Storage Time: Store in an airtight container in a cool dry place for up to 1 week or freeze for up to 6 weeks.

Yield: Makes about 1 lb.

Chocolate Fruit and Nut Bark

Ingredients

  • 2 1/2 cups chopped dark chocolate
  • 1/4 cup chopped dried apricots, divided
  • 1/4 cup chopped dried cherries, divided
  • 1/4 cup chopped hazelnuts, divided
  • 1/4 cup chopped shelled unsalted pistachios, divided
  • 1 tsp vanilla
  • 1/4 tsp coarse sea salt

Directions

  1. Place chocolate in a medium stainless steel bowl. Set bowl over a saucepan of simmering water. Do not allow water to touch the bowl.
  2. Heat, stirring frequently, until almost all chocolate is melted. Remove from heat and stir until smooth.
  3. Gently stir 2 tbsp apricots, 2 tbsp cherries, 2 tbsp hazelnuts, 2 tbsp pistachios and vanilla into melted chocolate. Spread mixture in a parchment paper-lined rimmed baking sheet.
  4. Sprinkle chocolate mixture with remaining fruit, remaining nuts and salt; pat gently so that fruit, nuts and salt adhere.
  5. Refrigerate until firm, about 1 hour.
  6. Break bark into pieces. Store in an airtight container in a cool dry place for up to 1 week or freeze for up to 2 months.
