CHOCOLATE OAT SQUARES

These baked snacks combine the wholesomeness of oats with the decadence of our fudgy Chocolate Pecan Filling.

Yield: Makes 35.

CHOCOLATE OAT SQUARES

Ingredients

  • 1 cup butter, softened
  • 2 cups packed brown sugar
  • 2 large eggs
  • 2 tsp vanilla
  • 2 1/2 cups all-purpose flour
  • 3 cups quick-cooking rolled oats
  • 1 tsp baking soda
  • Chocolate Pecan Filling

Directions

  1. Preheat oven to 350°F.
  2. Using medium speed of an electric mixer, cream together butter and brown sugar until fluffy. Beat in eggs and vanilla until blended.
  3. Combine flour, oats and soda; stir into creamed mixture.
  4. Press two-thirds of oat mixture into bottom of an ungreased 10x15 inch jelly-roll pan.
  5. Spread Chocolate Pecan Filling over top. Dot remaining oat mixture on filling.
  6. Bake at 350°F for 25 minutes. Chocolate filling should still look moist.
  7. Cool on a rack. Cut into squares. May be frozen for up to 1 month.

CHOCOLATE PECAN FILLING

Ingredients

  • 1 1/2 cups chocolate chips
  • 1 can (300 ml) sweetened condensed milk
  • 2 tbsp salted butter
  • 1/2 cup chopped pecans
  • 1 tsp vanilla

Directions

  1. Combine chocolate chips, condensed milk and butter in a medium saucepan.
  2. Cook over low heat, stirring occasionally, until chocolate chips are melted and mixture is smooth.
  3. Stir in pecans and vanilla. Cool to room temperature.
