CHOCOLATE PEANUT BUTTER COOKIES

Peanut butter cookies are a favourite treat for many — but they’re even better when you add some chocolate to the mix.

Yield: Makes 7 dozen.

CHOCOLATE PEANUT BUTTER COOKIES

Ingredients

  • 1 1/4 cups peanut butter
  • 1 cup salted butter, softened
  • 1 cup granulated sugar
  • 1 cup packed dark brown sugar
  • 2 large eggs
  • 1 tsp vanilla
  • 2 1/2 cups all-purpose flour
  • 3 tbsp unsweetened cocoa
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 1/2 cups chocolate chips

Directions

  1. Preheat oven to 375°F.
  2. Using medium speed of an electric mixer, beat together peanut butter, butter, sugar and brown sugar until fluffy.
  3. Beat in eggs, one at a time, beating well after each addition. Beat in vanilla.
  4. Combine flour, cocoa, baking powder and salt; stir into peanut butter mixture just until blended. Stir in chocolate chips.
  5. Shape dough into 1 inch balls. Place balls 2 inches apart on greased cookie sheets.
  6. Using a fork, flatten cookies in a criss-cross pattern.
  7. Bake at 375°F for 10 - 12 minutes. Remove from cookie sheets and cool cookies on racks. May be frozen for up to 2 months.
