Christmas Biscotti

We made these festive biscotti reminiscent of traditional fruitcake. We added almonds, glace fruit and holiday spice. Finish it off by dipping in glazed chocolate. 

Storage time: Up to 2 weeks in an air-tight container or freeze for up to 6 weeks.

Christmas Biscotti

Ingredients

  • 1/2 cup salted butter, softened
  • 1 cup granulated sugar
  • 2 tsp vanilla
  • 1/4 tsp grated orange peel
  • 3 large eggs
  • 1 cup chopped walnuts or pecans
  • 1 tsp cardamom
  • 2 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup finely chopped candied mixed fruit
  • Chocolate Glaze, recipe follows

Directions

  1. Preheat oven to 325°F.
  2. Using medium speed of an electric mixer, beat together sugar and butter until fluffy. Beat in eggs, one at a time, until blended. Beat in vanilla and orange peel.
  3. Combine nuts, cardamom, flour, baking powder, salt and candied fruit in a bowl.
  4. Beat flour mixture into butter mixture until combined.
  5. Divide dough in half. On a lightly greased baking sheet, shape dough into 2 logs, about 14 x 1 1/2 inches. Space logs 2 inches apart.
  6. Bake for 30 minutes. Remove from oven and cool 5 minutes. Reduce oven temperature to 275°F
  7. Transfer logs to a cutting board and cut each log diagonally into 1 /2 inch slices. Place slices, cut side down, on baking sheet.
  8. Bake at 275°F for 20 minutes. Cool on racks.
  9. Spread one side of biscotti with a thin layer of Chocolate Glaze. Place in refrigerator until glaze is set. Store cookies in an airtight container.

Chocolate Glaze

Ingredients

  • 1/2 cup chocolate chips
  • 2 tbsp salted butter

Directions

  1. Place chocolate chips and butter into a medium microwave-safe bowl. Microwave for 30 seconds at 50% power. Remove bowl from microwave and stir. Repeat this process until the chocolate is just half melted. Stir chocolate until remaining chocolate is fully melted. Use immediately.
