Christmas Biscotti
We made these festive biscotti reminiscent of traditional fruitcake. We added almonds, glace fruit and holiday spice. Finish it off by dipping in glazed chocolate.
Storage time: Up to 2 weeks in an air-tight container or freeze for up to 6 weeks.

Christmas Biscotti
Ingredients
- 1/2 cup salted butter, softened
- 1 cup granulated sugar
- 2 tsp vanilla
- 1/4 tsp grated orange peel
- 3 large eggs
- 1 cup chopped walnuts or pecans
- 1 tsp cardamom
- 2 1/2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup finely chopped candied mixed fruit
- Chocolate Glaze, recipe follows
Directions
- Preheat oven to 325°F.
- Using medium speed of an electric mixer, beat together sugar and butter until fluffy. Beat in eggs, one at a time, until blended. Beat in vanilla and orange peel.
- Combine nuts, cardamom, flour, baking powder, salt and candied fruit in a bowl.
- Beat flour mixture into butter mixture until combined.
- Divide dough in half. On a lightly greased baking sheet, shape dough into 2 logs, about 14 x 1 1/2 inches. Space logs 2 inches apart.
- Bake for 30 minutes. Remove from oven and cool 5 minutes. Reduce oven temperature to 275°F
- Transfer logs to a cutting board and cut each log diagonally into 1 /2 inch slices. Place slices, cut side down, on baking sheet.
- Bake at 275°F for 20 minutes. Cool on racks.
- Spread one side of biscotti with a thin layer of Chocolate Glaze. Place in refrigerator until glaze is set. Store cookies in an airtight container.

Chocolate Glaze
Ingredients
- 1/2 cup chocolate chips
- 2 tbsp salted butter
Directions
- Place chocolate chips and butter into a medium microwave-safe bowl. Microwave for 30 seconds at 50% power. Remove bowl from microwave and stir. Repeat this process until the chocolate is just half melted. Stir chocolate until remaining chocolate is fully melted. Use immediately.
