CITRUS GRILLED CHICKEN SALAD

This fresh entrée-size salad makes for a quick and delicious dinner on a hot summer evening.

Yield: Serves 4.

CITRUS GRILLED CHICKEN SALAD

Ingredients

  • 3/4 cup orange marmalade
  • 1/3 cup lemon juice
  • 1 tbsp Dijon mustard
  • 4 boneless skinless chicken breasts
  • 8 cups torn mixed greens
  • 3 small navel oranges, peeled and sliced
  • 3 green onions, diagonally sliced

Directions

  1. To prepare dressing, whisk together marmalade, lemon juice and mustard; reserve 2/3 cup (150 mL) of dressing for salad.
  2. Grill chicken over medium heat on natural gas barbecue, basting with remaining dressing, for 5 - 7 minutes per side.
  3. Combine greens, oranges and onions with 1/2 cup (125 mL) of the reserved dressing. Divide salad among 4 plates.
  4. Diagonally slice chicken breasts; place on top of salads. Drizzle with remaining reserved dressing.

Tip: For a creamier dressing, mix dressing using a blender for 10 seconds.
