Citrus Queso

We added orange and lime to this classic Mexican cheese. Serve this refreshing citrus cheese on top of your next taco for a more authentic street taco flavour. 

 

Storage time: 1 - 2 days in the refrigerator.

Citrus Queso

Ingredients

  • 1 lb (454g) queso fresco
  • 3/4 cup canola oil*
  • 1/3 cup fresh orange juice*
  • 2 tbsp fresh lime juice*
  • 4 tsp orange peel*
  • 2 tsp lime peel*
  • 2 cloves garlic, crushed*
  • 2 tsp oregano, crumbled*
  • 1 tsp red chili flakes*
  • 5-6 sprigs cilantro*

Directions

  1. Slice cheese and lay in the bottom of a shallow dish.
  2. Combine oil, juices, peel, garlic, oregano, chili flakes and cilantro sprigs in a bowl and mix well. Pour evenly over top of the cheese.
  3. Marinate the cheese in the refrigerator for 2 hours or overnight.
  4. Remove from refrigerator and let stand for 30 minutes.
  5. Drain marinade and discard. Crumble cheese and serve on tacos

Tip: Feta cheese can be substituted for the Queso Fresco cheese in this recipe.
