Concorde Grape Jam

This tasty homemade jam is always a hit with the kids and makes the best peanut butter and jam sandwiches!
 

Yield: Makes about 3 cups

Concorde Grape Jam

Ingredients

  • 2 lb (1 kg) Concord grapes, about 4 1/2 cups
  • Granulated sugar
  • 1 tbsp fresh lemon juice

Directions

  1. Stem and wash grapes; press pulp from skins into a non-reactive Dutch oven. Cook pulp until soft, about 10 minutes; rub through a sieve to remove seeds.
  2. In a separate saucepan, cook skins until tender in just enough water to cover, about 15 minutes.
  3. Add the cooked skins to the cooked pulp and bring to a boil; boil 5 minutes.
  4. Measure grape mixture. Measure and add 1/2 cup sugar for each cup of grape mixture. Add lemon juice. Bring to a boil and cook, stirring frequently, until thick.
  5. Pour into hot sterilized jars, leaving 1/4 inch headspace. Wipe jar rims thoroughly. Seal and process in a boiling water bath for 10 minutes.
