CORIANDER BAKED YAMS

This sweet and citrusy side dish is big enough to feed a crowd at Thanksgiving or Christmas dinner.

Yield: Serves 10 - 12.

CORIANDER BAKED YAMS

Ingredients

  • 10 cups cubed peeled yams
  • 1/3 cup butter
  • 1 tbsp coriander
  • 1 tbsp packed golden brown sugar
  • 1 tbsp grated orange peel
  • 1 1/2 tsp grated lemon peel
  • 1/2 tsp salt
  • 1/8 tsp cayenne pepper
  • 2 tbsp chopped fresh parsley

Directions

  1. Cook yams in boiling salted water just until tender, about 20 minutes; drain.
  2. Melt butter in a small saucepan over low heat. Stir in next 6 ingredients (coriander through cayenne pepper).
  3. Cook, stirring frequently, until mixture is fragrant, about 2 minutes. Pour butter mixture over yams and toss to coat.
  4. Spoon mixture into a greased 9x13 inch baking dish. May be prepared to this point and refrigerated for up to 24 hours. Remove from refrigerator and let stand for 20 - 30 minutes.
  5. Bake, uncovered, at 350°F for 30 - 35 minutes or until heated through and lightly browned.
  6. Sprinkle with parsley. Serve immediately.
