CORIANDER SPIKED PORK TENDERLOIN

Pork tenderloin takes well to a variety of different flavours. This barbecued version is marinated in a mixture of coriander, brown sugar and soy sauce.

Yield: Serves 4 - 6.

CORIANDER SPIKED PORK TENDERLOIN

Ingredients

  • 2 cloves garlic, crushed
  • 2 tsp coriander
  • 1 tbsp freshly ground pepper
  • 1 tbsp packed brown sugar
  • 1/4 cup soy sauce
  • 2 pork tenderloins (3/4 lb)

Directions

  1. To prepare marinade, combine all ingredients except pork in a heavy zip-lock plastic bag. Remove 2 tbsp marinade; set aside.
  2. Prick pork several times with a fork. Add pork to marinade in bag and squeeze bag to coat pork with marinade; seal bag. Let stand 30 minutes.
  3. Remove pork from marinade and pat dry; discard marinade.
  4. Grill pork over low heat on natural gas barbecue for about 30 minutes or until a meat thermometer registers 160ºF. Baste occasionally with reserved marinade.
  5. Let stand for 5 minutes before slicing.
