CORN AMANDINE

Sliced almonds, butter, garlic and parsley turn frozen corn kernels into a dinner-worthy side dish.

Yield: Serve 10.

CORN AMANDINE

Ingredients

  • 1/4 cup salted butter
  • 1/2 cup sliced almonds
  • 8 cups frozen kernel corn
  • 1/4 cup water
  • 1 tsp chicken bouillon mix
  • 1/4 tsp garlic powder
  • 1/4 tsp freshly ground pepper
  • 1 tbsp chopped fresh parsley

Directions

  1. Melt butter in a frypan over medium heat. Add almonds and sauté until lightly browned, about 3 minutes.
  2. Stir in corn, water, bouillon mix, garlic powder and pepper.
  3. Bring to a boil; reduce heat, cover and simmer until corn is tender and most of liquid is absorbed, about 5 - 7 minutes. Sprinkle with parsley.
