CRANBERRY APPLE CRISP

Cranberries add colour and tartness to a classic apple crisp. This easy baked fruit dessert is a perfect addition to a Thanksgiving or Christmas dinner.

CRANBERRY APPLE CRISP

Ingredients

  • 1 cup all-purpose flour
  • 3/4 cup quick-cooking rolled oats
  • 2/3 cup firmly packed brown sugar
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 1/2 cup chilled salted butter, cubed
  • 7 cups thinly sliced peeled Golden Delicious apples
  • 2 cups fresh or frozen cranberries
  • 1/3 cup maple-flavoured pancake syrup
  • 2 tbsp firmly packed brown sugar
  • 2 tbsp all-purpose flour
  • 1 tsp vanilla
  • 1 tsp grated lemon or orange peel
  • Vanilla ice cream*

Directions

  1. To prepare crumb mixture, combine 1 cup flour, oats, 2/3 cup brown sugar, cinnamon and salt in a bowl.
  2. Using fingertips, rub in butter until mixture is crumbly. Crumb mixture may be prepared and refrigerated for up to 24 hours.
  3. Preheat oven to 350°F. Meanwhile, combine apples, cranberries, pancake syrup, 2 tbsp brown sugar, 2 tbsp flour, vanilla and lemon peel, and spoon into a greased shallow 3 quart (3 L) baking dish.
  4. Sprinkle crumb mixture over top. Bake at 350°F for 55 - 60 minutes or until golden brown and juices are thick and bubbly. Serve warm with ice cream.
