Cranberry Spice Bread

Conveniently made in a bread machine, this delicious bread has holiday spices and dried cranberries; its flavour is reminiscent of a hot cross bun. Serve this sweet bread during the holidays, at Easter or any special occasion.

Storage Time: 2 days on the shelf, 7 days in the refrigerator and up to 2 months in the freezer.

Yield: Makes 1 loaf (2 lbs)

Cranberry Spice Bread

Ingredients

  • 1 1/4 cups water
  • 1/3 cup honey
  • 2 tbsp canola oil
  • 1 tbsp grated orange peel
  • 1 1/2 tsp salt
  • 2 1/4 cups all-purpose flour
  • 1 1/4 cups whole wheat flour
  • 3/4 tsp cinnamon
  • 1/4 tsp ground ginger
  • 1/4 tsp nutmeg
  • 1/8 tsp ground cloves
  • 2 tsp bread machine yeast
  • 1 cup dried cranberries

Directions

  1. Place all ingredients in baking pan of bread machine in the order in which they are listed or follow the manufacturer’s operating instructions.
  2. Select the whole grain bread cycle.
  3. Add cranberries when the “add ingredient” function beeps. This occurs before kneading is complete.
  4. Remove baked bread from pan and cool on a rack.
  5. Alternatively, to make buns, select dough cycle and remove dough after dough cycle is finished, form into buns, let rise till double and bake in the oven.

Tip: Most bread machines have an “add ingredient“ function that signals with beeps when it is time to add ingredients such as fruit or nuts. This allows ingredients to be added just before the kneading is complete to prevent them from getting chopped up during the mixing cycle. Refer to your owner’s manual for specific instructions.
