Creamed Hearty Greens

A great healthy side to any meal!

Creamed Hearty Greens

Ingredients

  • 1½ tbsp canola oil
  • 1 cup sliced shallots
  • 8 cups chopped kale, stems removed
  • 4 cups baby arugula
  • 4 cups chopped spinach
  • 4 cloves garlic, finely chopped
  • 2 bay leaves
  • 1 tsp red pepper flakes
  • ⅓ cup fresh lemon juice
  • 1 tbsp grated lemon peel
  • 2 cups whipping cream
  • ½ tsp salt
  • ½ tsp freshly ground pepper
  • 1 tbsp liquid honey

Directions

  1. Heat oil in a large pot over medium heat. Sauté shallots until golden, about 3 – 4 minutes. Add kale; sauté for an additional 4 minutes. Add arugula, spinach, garlic, bay leaves and red pepper flakes; cook for 1 minute. Add lemon juice, peel and cream; cover and simmer for 10 minutes. Season with salt and pepper.
  2. Remove greens with a slotted spoon; keep warm and set aside.
  3. Add honey to cream mixture and simmer until liquid is reduced by half, about 5 – 7 minutes. Discard bay leaves. Pour cream mixture over greens. Serve immediately.
