CREAMY ORZO WITH PARMESAN

Orzo is a small pasta that resembles grains of rice. This dish comes out almost like a pasta risotto, flavoured with Parmesan cheese.

Yield: Serves 3.

CREAMY ORZO WITH PARMESAN

Ingredients

  • ​1 tbsp salted butter
  • 1 cup orzo
  • 1 1/4 cups canned chicken broth
  • 1 1/4 cups water
  • 1/2 tsp basil, crumbled
  • 1/4 tsp salt
  • 1/4 tsp freshly ground pepper
  • 1/4 cup freshly grated Parmesan cheese

Directions

  1. Melt butter in a saucepan over medium heat. Add orzo and cook, stirring frequently, until orzo is just beginning to turn light golden.
  2. Stir in broth, water, basil, salt and pepper. Bring to a boil.
  3. Reduce heat and simmer, uncovered, stirring occasionally until orzo is tender and most of liquid is absorbed, about 12 - 15 minutes. Stir in Parmesan cheese.
