CREAMY ORZO WITH PARMESAN
Ingredients
- 1 tbsp salted butter
- 1 cup orzo
- 1 1/4 cups canned chicken broth
- 1 1/4 cups water
- 1/2 tsp basil, crumbled
- 1/4 tsp salt
- 1/4 tsp freshly ground pepper
- 1/4 cup freshly grated Parmesan cheese
Directions
- Melt butter in a saucepan over medium heat. Add orzo and cook, stirring frequently, until orzo is just beginning to turn light golden.
- Stir in broth, water, basil, salt and pepper. Bring to a boil.
- Reduce heat and simmer, uncovered, stirring occasionally until orzo is tender and most of liquid is absorbed, about 12 - 15 minutes. Stir in Parmesan cheese.
