CREAMY RICE PUDDING

Rice pudding is an easy but delicious dessert — quick enough for a weeknight treat!

Yield: Serves 4.

CREAMY RICE PUDDING

Ingredients

  • 1/2 cup short-grain white rice
  • 4 cups homogenized milk
  • 1/3 cup granulated sugar
  • 1/4 tsp salt
  • 1/3 cup raisins
  • 1 tsp vanilla

Directions

  1. Combine rice, milk, sugar and salt in a medium saucepan. Bring to a boil, stirring frequently.
  2. Reduce heat so mixture simmers. Cook, stirring frequently, for 40 minutes.
  3. Add raisins. Continue cooking for an additional 10 - 15 minutes or until rice is very tender and pudding is creamy and thickened. Stir in vanilla. Serve warm or cold.
