Rice pudding is an easy but delicious dessert — quick enough for a weeknight treat!

CREAMY RICE PUDDING
Ingredients
- 1/2 cup short-grain white rice
- 4 cups homogenized milk
- 1/3 cup granulated sugar
- 1/4 tsp salt
- 1/3 cup raisins
- 1 tsp vanilla
Directions
- Combine rice, milk, sugar and salt in a medium saucepan. Bring to a boil, stirring frequently.
- Reduce heat so mixture simmers. Cook, stirring frequently, for 40 minutes.
- Add raisins. Continue cooking for an additional 10 - 15 minutes or until rice is very tender and pudding is creamy and thickened. Stir in vanilla. Serve warm or cold.
