Bring some crunch to your holiday fruit bark. This chocolate bark is full of dried cranberries and apricots. Keep some in your freezer to give out as gifts over the Christmas season.

Yield: Makes 3/4 lb



  • 2 cups milk chocolate-flavoured dipping wafers
  • 1 1/2 cups crispy rice cereal
  • 1/3 cup dried cranberries
  • 1/3 cup chopped dried apricots


  1. Line a rimmed baking sheet with non-stick foil.
  2. Melt dipping wafers in a large heavy saucepan over low heat, stirring frequently until smooth.
  3. Remove from heat; stir in cereal, cranberries and apricots.
  4. Spread mixture evenly in prepared pan.
  5. Refrigerate for 1 hour or until firm. Break bark into pieces. Store in an airtight container in a cool dry place for up to 1 week or freeze for up to 6 weeks.
