This oven-baked chicken is breaded in a fresh breadcrumb mixture. Honey, lime and a bold blend of spices give this crispy meal loads of flavour.

  • 2 tbsp honey
  • 1 tbsp fresh lime juice
  • 1 tsp grated lime peel
  • 1 tsp chili powder
  • 1/2 tsp ground cumin
  • 1/2 tsp salt
  • 1/2 tsp freshly ground pepper
  • 1/8 tsp cayenne pepper
  • 1/8 tsp cinnamon
  • 2 cups soft fresh bread crumbs
  • 1/4 cup chopped fresh parsley
  • 1 tbsp canola oil
  • 4 boneless skinless chicken breasts


  1. Preheat oven to 425°F. Grease a 9x13 inch baking pan or line with non-stick foil.
  2. Combine honey, lime juice, lime peel, chili powder, ground cumin, salt, pepper, cayenne and cinnamon in a pie plate; set aside.
  3. Combine bread crumbs, parsley and oil in a separate pie plate.
  4. Working with one piece at a time, dip chicken into honey mixture, turning to coat both sides. Place chicken in bread crumb mixture, pressing lightly so that crumbs adhere; turn to coat both sides. Place chicken in a single layer in prepared pan.
  5. Bake, uncovered, until chicken is cooked through and coating is golden brown, about 25 - 30 minutes.
