CRISPY ZUCCHINI SPEARS

These crispy zucchini spears are baked rather than fried for a healthier version of the popular pub appetizer. The breading is a tasty mix of Parmesan cheese, cornmeal and spices.

CRISPY ZUCCHINI SPEARS

Ingredients

  • 2 medium zucchini
  • 1/4 cup cornmeal
  • 1/4 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp oregano, crumbled
  • 1/4 tsp paprika
  • 1 large egg, beaten

Directions

  1. Preheat oven to 450°F.
  2. Cut each zucchini in half and slice into spears.
  3. Combine cornmeal, flour, Parmesan, garlic powder, salt, oregano and paprika.
  4. Dip zucchini spears in egg and then in cornmeal mixture. Place spears on a greased baking sheet. Bake at 450°F for 15 - 20 minutes.
