CUCUMBER SALAD

This cool salad will be a welcome addition at any summer barbecue. Fresh mint, cilantro and a light rice vinegar dressing complement the flavour of the cucumbers.

Yield: Serves 4.

CUCUMBER SALAD

Ingredients

  • 1/4 cup granulated sugar
  • 2 tbsp rice vinegar
  • 2 tbsp finely chopped fresh mint
  • 3 cups julienned English cucumber
  • 1/2 cup thinly sliced green onions
  • 1/2 cup finely chopped fresh cilantro

Directions

  1. To prepare dressing, whisk together sugar, vinegar and mint until blended.
  2. Combine English cucumber, green onions and cilantro in a bowl.
  3. Add dressing and toss to combine. May be refrigerated for up to 30 minutes
