CUCUMBER SALAD
Ingredients
- 1/4 cup granulated sugar
- 2 tbsp rice vinegar
- 2 tbsp finely chopped fresh mint
- 3 cups julienned English cucumber
- 1/2 cup thinly sliced green onions
- 1/2 cup finely chopped fresh cilantro
Directions
- To prepare dressing, whisk together sugar, vinegar and mint until blended.
- Combine English cucumber, green onions and cilantro in a bowl.
- Add dressing and toss to combine. May be refrigerated for up to 30 minutes
