Cumin, Caraway & Sea Salt Whole Wheat Crackers

From our Art of Entertaining cookbook, this recipe has crackers made easy and very flavourful. You'll never want to buy crackers from the store again!

Yield: Makes 64 crackers

Whole Wheat Crackers

Ingredients

  • 1¼ cups whole wheat flour, Divided
  • ½ cup ground flaxseed
  • ¼ tsp salt
  • ½ cup water

Directions

  1. Preheat oven to 350°F.
  2. Combine 1 cup flour, flaxseed and salt in a small bowl. Add water and stir until dough comes together and forms a ball.
  3. Knead dough gently 3 – 4 times. Do not overwork dough. If dough is too sticky, gradually knead in additional ¼ cup of flour, 1 tbsp at a time.
  4. On a generously floured surface, roll out dough into a 16x16 inch square, rotating occasionally to prevent sticking.

Cumin, Caraway & Sea Salt Spice

Ingredients

  • 1 tsp cumin seeds
  • 1 tsp caraway seeds
  • 2 tbsp extra-virgin olive oil
  • 1 tsp fleur de sel (finishing salt or course sea salt)

Directions

  1. Grind cumin seeds and caraway seeds in a coffee grinder until coarsely ground. Alternatively, a mortar and pestle may be used.
  2. Combine spice mixture and oil in a small bowl. Brush dough with mixture and sprinkle with fleur de sel.
  3. Cut dough into 2x2 inch squares. Transfer crackers to parchment paper-lined baking sheets.
  4. Bake until edges begin to curl and crackers are crispy, about 15 – 17 minutes. Remove from pan and cool on a rack. Store in an airtight container in a cool dry place for up to 1 week. May be frozen.
