This easy vinaigrette is flavoured with Dijon mustard and the distinctive taste of cumin. Use it to dress a mixed green salad. The cumin goes particularly well with cucumber and fresh orange slices if you want to throw some in with the greens.

Yield: Makes 1 1/4 cup.



  • 1 tbsp minced onion
  • 1/2 tsp Dijon mustard
  • 3/4 tsp cumin
  • 1/4 tsp salt
  • 1/3 cup fresh lemon juice
  • 3/4 cup extra-virgin olive oil


  1. Whisk together onion, mustard, cumin, salt and lemon juice.
  2. Whisking continually, add oil in a thin stream until blended. Vinaigrette may be refrigerated for up to 4 days.
