CURRIED PASTA AND CHEESE

Curry flavours work surprisingly well with mac and cheese! We don’t specify what kind of cheese to use here — use up whatever you happen to have lingering in the fridge. Cheddar, Edam, Gouda, Swiss or other meltable cheeses will all work.

CURRIED PASTA AND CHEESE

Ingredients

  • 1 1/2 tbsp cornstarch
  • 1 tsp curry powder
  • 1 tsp dry mustard
  • 1/8 tsp cayenne pepper
  • Dash freshly ground nutmeg
  • 2 1/4 cups homogenized milk
  • 2 tbsp salted butter
  • 2 1/4 cups shredded cheese
  • 8 oz (250 g) cavatappi pasta, cooked and drained
  • Curried Bread Crumbs

Directions

  1. To prepare sauce, combine cornstarch, curry powder, mustard, cayenne and nutmeg in a large saucepan.
  2. Gradually whisk in milk. Add butter. Cook over medium heat, whisking constantly, until sauce thickens and comes to a boil.
  3. Remove from heat and gradually stir in cheese. Stir in cooked cavatappi.
  4. Spoon mixture into a greased shallow 2 quart (2 L) baking dish. Sprinkle Curried Bread Crumbs over top. May be prepared to this point and refrigerated for up to 24 hours or frozen for up to 1 month. Thaw in refrigerator before proceeding.
  5. Bake at 350°F for 25 - 30 minutes or until mixture is heated through and bubbly.

Tip: Cavatappi pasta is a short, ridged, spiral macaroni. It is sometimes called sedani ritorti. Elbow macaroni may also be used.
CURRIED BREAD CRUMBS

Ingredients

  • 1/4 cup salted butter
  • 1/2 tsp dry mustard
  • 1/2 tsp curry powder
  • Dash cayenne pepper
  • 2 1/2 cups fresh bread crumbs

Directions

  1. Melt butter in a frypan. Stir in mustard, curry powder and cayenne pepper. Cook for 1 minute.
  2. Add bread crumbs. Cook, stirring frequently, until bread crumbs are crisp and golden.
