DEVILLED HAM

Devilled ham is a classic mixture of ham, celery, green onion and a mayo-based dressing. Use it as a sandwich filling or as a dip to go with crostini or crackers.

Yield: Makes 2 cups.

DEVILLED HAM

Ingredients

  • 2 cups diced ham
  • 1/2 cup finely chopped celery
  • 1/4 cup finely chopped green onion
  • 1/4 cup mayonnaise
  • 2 tbsp Dijon mustard
  • 1 tsp tarragon, crumbled
  • 1/4 tsp hot pepper sauce

Directions

  1. In a food processor, process ham, using an on/off motion, until finely chopped.
  2. Transfer ham to a bowl and stir in remaining ingredients (celery through hot pepper sauce).
  3. Use as a sandwich spread or as a topping for crostini.
