DILLED VEGETABLES IN A PACKET

Cooking a medley of vegetables in a foil packet is the easiest way to create a healthy barbecued side dish.

Yield: Serves 6 - 8.

DILLED VEGETABLES IN A PACKET

Ingredients

  • 2 cups sliced mushrooms
  • 2 cups sliced zucchini
  • 2 cups broccoli florets
  • 1/2 cup diced red bell pepper
  • 2 tbsp butter, melted
  • 1 tsp dill weed
  • 1/8 tsp garlic powder
  • 1/8 tsp salt
  • 1/8 tsp freshly ground pepper

Directions

  1. Combine all ingredients in a bowl.
  2. Place vegetable mixture in centre of a large piece of heavy-duty foil. Bring edges of foil together to form a packet; close all edges with tight double folds.
  3. Cook over medium heat on natural gas barbecue, turning packet over frequently, for 20 - 25 minutes or until vegetables are tender.
