DOUBLE CHOCOLATE PUDDING

Cocoa and chocolate chips give this dessert an extra hit of chocolate. Serve it with a dollop of whipped cream for a special presentation.

DOUBLE CHOCOLATE PUDDING

Ingredients

  • 1/4 cup cocoa
  • 1/4 cup granulated sugar
  • 2 tbsp cornstarch
  • 2 1/4 cups milk (2%), divided
  • 1/4 cup granulated sugar
  • 1/4 tsp salt
  • 1 cup chocolate chips
  • 1 tbsp salted butter
  • 1 tsp vanilla

Directions

  1. Combine cocoa, 1/4 cup sugar and cornstarch in a bowl. Gradually whisk in 1/4 cup milk until blended.
  2. Combine remaining 2 cups milk, 1/4 cup sugar and salt in a saucepan and bring to a boil over medium heat. Gradually pour cocoa mixture into milk mixture, whisking constantly.
  3. Bring to a boil and cook, whisking constantly, until mixture is thickened, about 1 minute.
  4. Remove from heat and stir in chocolate chips and butter; stir until melted. Stir in vanilla.
  5. Let pudding cool for 15 minutes, stirring occasionally.
  6. Transfer to a bowl. Cover surface of pudding with plastic wrap. Refrigerate pudding for at least 1 hour or until chilled.
