Easy Chickpea Hummus

This easy hummus is a real crowd pleaser and is best served with pita crisps, crackers or vegetable sticks.

Yield: Makes 2 1/3 cups

Easy Chickpea Hummus

Ingredients

  • 1 can (19 oz/540 ml) chickpeas, rinsed and drained
  • 1/4 cup fresh lemon juice
  • 2 tbsp extra-virgin olive oil
  • 2 tbsp tahini (sesame seed paste)
  • 2 cloves garlic, chopped
  • 1/2 tsp grated lemon peel
  • 1/2 tsp salt
  • 1/4 tsp freshly ground pepper
  • 1 tbsp water, optional
  • Pita crisps or crackers*

Directions

  1. Place all ingredients except water and pita crisps in a food processor.
  2. Process until smooth. If hummus is too thick, add water and process to combine.
  3. Serve with pita crisps or crackers.
