FETA MEATBALLS

Stuff a small piece of feta into your baked meatballs for a cheesy surprise. These beef meatballs make a great appetizer — pass them around with toothpicks at your next party.

Yield: Makes 4 dozen.

FETA MEATBALLS

Ingredients

  • 2 lb (1 kg) lean ground beef
  • 1 cup soft fresh bread crumbs
  • 2 cloves garlic, crushed
  • 1 tsp oregano, crumbled
  • 1 tsp salt
  • 1 tsp freshly ground pepper
  • 2 large eggs, lightly beaten
  • 6 oz (175 g) feta cheese, cut into 3/8 inch cubes

Directions

  1. Preheat oven to 350°F.
  2. Combine all ingredients except cheese until well blended. Shape 1 tbsp measures of beef mixture into balls. Press a small well in centre of each ball. Place a cube of cheese in each well. Wrap beef around cheese and reshape into a ball. Place meatballs on a rack in a large rimmed baking sheet.
  3. Bake until completely cooked, about 50 minutes. May be baked in advance and refrigerated for up to 24 hours. Do not freeze.
