FILLETS PROVENCALE IN FOIL

Provencale cooking is all about fresh ingredients and simple but mighty flavours. These fish fillets cook up on the barbecue in a foil packet.

Yield: Serves 4.

FILLETS PROVENCALE IN FOIL

Ingredients

  • 4 fish fillets
  • 2 tbsp grated Parmesan cheese
  • 1 tbsp chopped fresh parsley
  • 1/2 tsp basil, crumbled
  • 1/4 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp freshly ground pepper
  • 4 thin slices onion
  • 8 slices tomato
  • 1/2 cup thinly sliced green bell pepper

Directions

  1. Place each fish fillet on a piece of foil.
  2. Combine next 6 ingredients (cheese through pepper); sprinkle evenly over fillets.
  3. Place 1 slice onion and 2 slices tomato on each fillet. Arrange green pepper on top.
  4. Bring edges of foil together to form a packet; close all edges with tight double folds.
  5. Cook packets over medium heat on natural gas barbecue for 15 - 20 minutes.
