Frozen Grasshopper Pie

This frozen dessert pie is based on the classic grasshopper cocktail drink. Made with a chocolate crumb crust, mint flavoured cream cheese filling and topped with whipped cream and chocolate shavings, it is sure to be a hit with your guests.

Frozen Grasshopper Pie

Ingredients

  • 1 1/2 cups chocolate wafer crumbs
  • 1/4 cup salted butter, melted
  • 1/4 cup granulated sugar
  • 8 oz (250g) cream cheese, softened
  • 1/4 cup crème de menthe
  • 2 tbsp white crème de cacao
  • 4 drops green food colouring, optional
  • 1 jar (198 g) marshmallow crème
  • 1 cup whipping cream, whipped
  • Sweetened whipped cream, optional*
  • Chocolate shavings, optional*

Directions

  1. Preheat oven to 350°F.
  2. To prepare crust, combine crumbs, melted butter and sugar in a bowl until blended. Press mixture onto bottom and up sides of a 9 inch pie plate. Bake for 10 minutes. Cool crust completely in pan on a rack.
  3. To prepare filling, use medium speed of an electric mixer and beat together cream cheese, creme de menthe, creme de cacao and food colouring until blended.
  4. Add marshmallow creme and beat just until combined. Fold in whipped cream until blended. Spoon filling into crust.
  5. Cover and freeze for at least 8 hours or up to 2 weeks.
  6. Let stand at room temperature for 5 - 10 minutes before slicing. Garnish with sweetened whipped cream and chocolate shavings.
