Frozen Pineapple Caribbean Cocktail

What better way to cool down on a hot day than with a tropical blended drink made with pineapple, basil, coconut and rum 

Yield: Makes about 2 L

Frozen Pineapple Caribbean Cocktail

Ingredients

  • 1 pineapple, peeled, cored and cubed (about 4 cups)
  • 4 cups ice cubes
  • 1 can (14 oz/400 mL) coconut milk
  • 3/4 cup fresh basil leaves
  • 3/4 cup dark or white rum
  • 1 tbsp liquid honey
  • 1 tsp grated lime peel

Directions

  1. Purée ingredients in batches in a blender, filling blender no more than half-full for each batch.
  2. Transfer each batch into a large pitcher and stir to combine

Tip: If pineapple is ready, the best way to tell is by smell. If the bottom of the pineapple smells sweet, it will be ripe. If there is no smell, the pineapple is not ripe and, unfortunately, pineapples do not ripen off the tree. Also, keep in mind that a ripe pineapple may not always be yellow. Ripe pineapples can stay green. A second test to see if a pineapple is ready to eat is that there will be a little give when gently squeezed.
