FROZEN STRAWBERRY MARGARITA MOUSSE

Cool off with a frozen cocktail for dessert! These cups of velvety strawberry mousse are spiked with tequila and triple sec.

Yield: Serves 10.

FROZEN STRAWBERRY MARGARITA MOUSSE

Ingredients

  • 4 cups halved strawberries
  • 1/4 cup fresh lime juice
  • 2 tbsp tequila
  • 2 tbsp triple sec or Cointreau
  • 1 tbsp grated lime peel
  • 1 can sweetened condensed milk
  • 1 1/2 cups whipping cream, whipped

Directions

  1. Place strawberries, lime juice, tequila, triple sec and lime peel in a blender; puree until smooth. Add sweetened condensed milk and blend until combined.
  2. Transfer to a large bowl. Let stand for 5 minutes. Fold a quarter of whipped cream into strawberry mixture to lighten. Fold in remaining whipped cream until blended.
  3. Spoon mixture into margarita glasses or a serving bowl. Cover and freeze for at least 8 hours or up to 2 weeks.

Tip: Triple sec is a type of curacao, which is a generic term for several orange-flavoured liqueurs. Triple sec is clear, colourless and quite sweet. One of the most famous brand names of triple sec is Cointreau.
