FRUIT SALAD WITH BANANA SMOOTHIE DRESSING

Coat your favourite fruit in a creamy banana yogurt dressing. Use whatever fruit you have on hand — grapes, kiwi, strawberries, orange and grapefruit segments and peeled and cubed apples all work beautifully in this fruity salad.

Yield: Serves 6.

FRUIT SALAD WITH BANANA SMOOTHIE DRESSING

Ingredients

  • 3/4 cup chopped banana
  • 3/4 cup plain yogurt
  • 2 tbsp thawed frozen orange juice concentrate
  • 1 tbsp honey
  • 1 tsp vanilla
  • 8 cups assorted fresh fruit

Directions

  1. To prepare dressing, place banana, yogurt, orange juice concentrate, honey and vanilla in a blender; purée until smooth. May be refrigerated for up to 24 hours. Stir before using.
  2. Combine fruit in a large bowl. Pour dressing over fruit and toss to combine. Serve immediately.

Tip: We used cubed grapefruit segments, cubed orange segments, cubed peeled apples, cubed peeled kiwi fruit, blueberries and seedless red grapes for the fresh fruit in this recipe.
