FRUITED OATMEAL DROP BISCUITS

Change up your biscuits with the addition of oats and dried cranberries or raisins. Serve them at brunch with lots of butter.

FRUITED OATMEAL DROP BISCUITS

Ingredients

  • 1 3/4 cups quick-cooking rolled oats
  • 1 1/2 cups all-purpose flour
  • 1/3 cup granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp baking soda
  • 1/2 cup milk (2%)
  • 1/3 cup canola oil
  • 1/4 cup salted butter, melted
  • 1 large egg
  • 1/2 cup dried cranberries
  • 1/2 cup raisins

Directions

  1. Preheat oven to 400°F.
  2. Combine oats, flour, sugar, baking powder, salt and baking soda in a bowl. Whisk together milk, oil, melted butter and egg until blended. Add milk mixture to oats mixture and stir just until combined. Fold in cranberries and raisins. Drop rounded 1/4 cup measures of dough onto a greased cookie sheet. Bake until golden brown, about 17 - 20 minutes.
