GARDEN SALSA

This fresh, and slightly sweet, take on salsa brings together cucumber, onion and bell peppers. Serve it with tortilla chips.

Yield: Makes 1 1/2 cups.

GARDEN SALSA

Ingredients

  • 2/3 cup chopped seeded English cucumber
  • 1/2 cup chopped red bell pepper
  • 1/4 cup chopped red onion
  • 1 tbsp honey
  • 1 tbsp fresh lime juice
  • 1/4 tsp dill weed
  • 1/4 tsp salt
  • 1/4 tsp freshly ground pepper
  • Dash cayenne pepper*

Directions

  1. Combine all ingredients. Cover and refrigerate for up to 1 hour.
