GARLIC ROASTED POTATOES
2 lb (1 kg) small potatoes
2 tbsp olive oil
4 cloves garlic, chopped
1 tbsp rosemary, crumbled
1/2 tsp salt
1/2 tsp freshly ground pepper
Preheat oven to 425°F.
Combine all ingredients and toss until potatoes are thoroughly coated with seasonings. Place potatoes in a single layer in a greased shallow baking dish. Roast until potatoes are tender and lightly browned, about 50 minutes.
