This veggie side dish gets a sweet touch thanks to a crystalized ginger and orange marmalade glaze.

GINGER AND MARMALADE GLAZED BEETS
Ingredients
- 4 cups diced cooked beets
- 2 tbsp salted butter
- 1/3 cup orange marmalade
- 2 tbsp thawed frozen orange juice concentrate
- 2 tbsp fresh lemon juice
- 1 tbsp chopped crystallized ginger
Directions
- In a frypan, sauté beets in butter until heated through. Stir in remaining ingredients and cook until bubbly. Serve immediately.
