GINGER AND MARMALADE GLAZED BEETS

This veggie side dish gets a sweet touch thanks to a crystalized ginger and orange marmalade glaze.

GINGER AND MARMALADE GLAZED BEETS

Ingredients

  • 4 cups diced cooked beets
  • 2 tbsp salted butter
  • 1/3 cup orange marmalade
  • 2 tbsp thawed frozen orange juice concentrate
  • 2 tbsp fresh lemon juice
  • 1 tbsp chopped crystallized ginger

Directions

  1. In a frypan, sauté beets in butter until heated through. Stir in remaining ingredients and cook until bubbly. Serve immediately.
