GINGERBREAD BUNDT CAKE WITH ORANGE GLAZE
This is the perfect holiday dessert, without being too fussy. The cake itself is a moist and spicy gingerbread and it’s decorated simply with a sweet orange glaze.

GINGERBREAD BUNDT CAKE WITH ORANGE GLAZE
Ingredients
- 2 1/2 cups all-purpose flour
- 1 1/2 tsp baking soda
- 1 tsp cinnamon
- 1 tsp ground ginger
- 1/2 tsp ground cloves
- 1/2 cup salted butter, softened
- 1/2 cup packed dark brown sugar
- 1 tbsp grated fresh ginger
- 1 tbsp grated orange peel
- 3/4 cup fancy molasses
- 1 large egg
- 1 cup hot water
- Orange Glaze*
Directions
- Preheat oven to 350ºF.
- Sift flour, baking soda, cinnamon, ground ginger and cloves into a bowl; set aside.
- Using medium speed of an electric mixer, beat together butter, brown sugar, fresh ginger and orange peel until fluffy. Add molasses and egg; continue beating until blended.
- Stir in flour mixture just until combined. Add hot water and stir just until blended.
- Pour batter into a greased and floured 9 cup Bundt pan.
- Bake until a cake tester inserted in centre comes out clean, about 40 minutes.
- Cool in pan on a rack for 10 minutes.
- Invert cake onto rack and cool completely.
- Place cake on a serving plate. Drizzle Orange Glaze over top, allowing glaze to run down sides of cake.

Orange Glaze
Ingredients
- 1 1/2 cups icing sugar
- 3 tbsp fresh orange juice
- 1/2 tsp grated orange peel
- 1/2 tsp vanilla
Yield: Makes 2/3 cup.
Directions
- Stir together all ingredients until smooth.
