GLAZED LEMON POPPY SEED MUFFINS

Lemon and poppy seed is a classic muffin combo for good reason. These tangy muffins make for a great lunchbox or teatime snack.

GLAZED LEMON POPPY SEED MUFFINS

Ingredients

  • ​3 cups all-purpose flour
  • 1 tbsp baking powder
  • 1 tbsp poppy seeds
  • 1/2 tsp salt
  • 1 cup granulated sugar
  • 1 cup plain Greek yogurt
  • 3/4 cup canola oil
  • 3 large eggs
  • 1/4 cup fresh lemon juice
  • 2 tbsp grated lemon peel
  • 1 tsp vanilla
  • 3/4 cup icing sugar
  • 3 tbsp fresh lemon juice

Directions

  1. Preheat oven to 350ºF.
  2. Combine flour, baking powder, poppy seeds and salt in a bowl.
  3. Whisk together sugar, yogurt, oil, eggs, 1/4 cup lemon juice, lemon peel and vanilla in a separate bowl until blended.
  4. Add yogurt mixture to flour mixture and stir just until combined.
  5. Spoon batter into paper-lined or greased muffin cups, filling cups two-thirds full.
  6. Bake until a cake tester inserted in centres comes out clean, about 20 - 25 minutes.
  7. Cool muffins in pans for 5 minutes.
  8. Meanwhile, to prepare glaze, whisk together icing sugar and 3 tbsp lemon juice until smooth.
  9. Remove muffins from pans and cool on racks. While still warm, dip tops of muffins into glaze; cool completely.
