GREENS WITH ASPARAGUS AND ORANGES

This fresh salad makes the most of bright ingredients like fresh asparagus and canned Mandarin oranges. The dressing is a creamy mix of yogurt, orange juice and Dijon mustard.

GREENS WITH ASPARAGUS AND ORANGES

Ingredients

  • 2 cups sliced asparagus (2 inch)
  • 1/2 cup mayonnaise
  • 1/3 cup fresh orange juice
  • 1/4 cup plain yogurt
  • 1 tsp Dijon mustard
  • 1/2 tsp grated orange peel
  • 1/8 tsp salt
  • 1/8 tsp freshly ground pepper
  • 8 cups torn mixed greens
  • 1/2 cup thinly sliced red onion
  • 1 can (10 oz/284 mL) mandarin oranges, drained

Directions

  1. Cook asparagus in boiling salted water for 4 minutes; drain. Cool immediately in ice water; drain.
  2. To prepare dressing, whisk together mayonnaise, orange juice, yogurt, mustard, orange peel, salt and pepper until blended.
  3. Combine greens, onion, oranges and asparagus in a bowl. Toss with enough dressing to coat. Serve immediately. Remaining dressing may be refrigerated for up to 3 days. Stir before using.
