GREENS WITH GOAT CHEESE AND POMEGRANATE SEEDS

Take your mixed green salad to the next level by adding oranges, pomegranate seeds and goat cheese. We dress this bright salad with a lemon and orange juice dressing.

GREENS WITH GOAT CHEESE AND POMEGRANATE SEEDS

Ingredients

  • 1/4 cup olive oil
  • 2 tbsp fresh lemon juice
  • 1 tbsp thawed frozen orange juice concentrate
  • 1/4 tsp salt
  • 1/4 tsp freshly ground pepper
  • 10 cups torn mixed greens
  • 1/2 cup pomegranate seeds
  • 1/3 cup thinly sliced red onion
  • 3 medium navel oranges, peeled, sectioned and chopped
  • 1 log (150 g) soft goat cheese, crumbled

Directions

  1. To prepare dressing, whisk together oil, lemon juice, orange juice concentrate, salt and pepper until blended.
  2. Combine greens, pomegranate seeds, onion, oranges and cheese in a bowl. Add dressing and toss to coat. Serve immediately.
