GRILLED ARTICHOKE CROSTINI

Warm up these artichoke and cheese-topped baguette slices right on the barbecue. This makes a great appetizer at a backyard party.

Yield: Makes 1 1/2 dozen.

GRILLED ARTICHOKE CROSTINI

Ingredients

  • 1 baguette
  • 1 jar (6 oz/170 mL) marinated artichoke hearts, drained and chopped
  • 3/4 cup shredded mozzarella cheese
  • 3 tbsp finely diced red bell pepper
  • 1/4 cup diced seeded tomato
  • 2 tbsp grated Parmesan cheese

Directions

  1. Preheat natural gas barbecue on low heat for 10 - 15 minutes.
  2. Cut bread into 1/2 inch thick slices. Lightly toast 1 side of each slice on barbecue grid.
  3. Combine artichokes, mozzarella, bell pepper and tomato. Top toasted side of each bread slice with some of the mixture. Sprinkle with Parmesan cheese. Heat bread, cheese side up, on barbecue grid until underside of bread is toasted and cheese is melted.
