Grilled Corn and Smoked Gouda Salad with Honey Lemon Dressing
This recipe is everything that summer represents: Fresh, smoky and subtly sweet! The peppery arugula and smoked Gouda are nice change-ups and put this salad in a league of its own.

Grilled Corn and Smoked Gouda Salad with Honey Lemon Dressing
Ingredients
- ½ cup fresh lemon juice
- ¼ cup canola oil
- 3 tbsp liquid honey
- 1 tsp salt
- ½ tsp freshly ground pepper
- 6 cobs of corn, husked
- 1 tbsp canola oil
- 8 cups arugula
- 3½ cups diced red bell peppers
- 2 cups diced red onions
- 1 cup toasted sunflower seeds
- ½ cup shredded smoked Gouda cheese
Directions
- Preheat a natural gas barbecue to medium heat.
- To make dressing, whisk lemon juice, ¼ cup oil, honey, salt and pepper together in a small bowl; set aside.
- Lightly brush corn with 1 tbsp oil. Grill over medium heat, turning occasionally, until lightly browned, about 15 – 20 minutes. When cool enough to handle, cut corn kernels from cob using a sharp knife. There should be about 4 cups.
- Combine corn kernels with remaining salad ingredients in a large bowl. Add dressing and toss to combine.
