HALIBUT WITH CITRUS SALSA

Citrus flavours pair wonderfully with white fish like halibut. We bake the fish with a blend of orange juice and grated citrus peel then serve it with our spicy Citrus Salsa.

Yield: Serves 4.

HALIBUT WITH CITRUS SALSA

Ingredients

  • 2 tbsp fresh orange juice
  • 1 tbsp extra-virgin olive oil
  • 1 tsp grated orange peel, grapefruit peel and lime peel, each
  • 1/4 tsp salt
  • 1/4 tsp freshly ground pepper
  • 4 halibut fillets (about 6 oz/175 g each)
  • Citrus Salsa*

Directions

  1. Preheat oven to 425°F. Line a rimmed baking sheet with nonstick foil. Combine orange juice, oil, orange peel, grapefruit peel, lime peel, salt and pepper. Place fillets on prepared pan. Brush tops of fillets with orange juice mixture.
  2. Bake, uncovered, for 12 - 15 minutes per inch (2.5 cm) of thickness or until fish flakes easily with a fork. Serve with Citrus Salsa.

CITRUS SALSA

Ingredients

  • 1/2 cup chopped orange segments
  • 1/2 cup chopped grapefruit segments
  • 1/4 cup chopped lime segments
  • 1/4 cup diced red onion
  • 2 tbsp chopped fresh cilantro
  • 2 tbsp honey
  • 1 tbsp finely chopped seeded jalapeno pepper
  • 1 tbsp extra-virgin olive oil
  • 1 tsp grated orange peel, grapefruit peel and lime peel
  • 1/4 tsp salt
  • 1/8 tsp freshly ground pepper

Yield: Makes 1 1/3 cups.

Directions

  1. Combine all ingredients. Serve immediately.
