HERB ROASTED POTATOES

Coated with all of the best herbs, these flavourful potatoes are a great accompaniment to any kind of protein. Line your baking pan with parchment paper for an easier cleanup.

HERB ROASTED POTATOES

Ingredients

  • 1/4 cup extra-virgin olive oil
  • 2 tbsp fresh lemon juice
  • 2 tsp garlic powder
  • 1 tsp marjoram, crumbled
  • 1 tsp oregano, crumbled
  • 1 tsp rosemary, crumbled
  • 1 tsp thyme, crumbled
  • 1/4 tsp salt
  • 1/4 tsp freshly ground pepper
  • 8 cups potato chunks

Directions

  1. Combine all ingredients except potatoes in a plastic bag. Add potatoes and squeeze bag to coat potatoes with seasoning mixture.
  2. Place potatoes in a single layer in a parchment paper-lined large rimmed baking sheet.
  3. Bake at 400°F, stirring occasionally, for 50 - 60 minutes or until potatoes are tender and browned.
