HERBED MASHED POTATO GRATIN

This cheesy potato casserole is a great way to give new life to leftover mashed potatoes. Parsley, thyme and green onion give it a nice flavour lift.

Yield: Serves 6.

HERBED MASHED POTATO GRATIN

Ingredients

  • 4 slices bacon, julienned
  • 1 cup sliced green onions
  • 6 cups cold mashed potatoes
  • 1/3 cup milk (2%)
  • 2 tbsp chopped fresh parsley
  • 1/4 tsp thyme, crumbled
  • 1/4 tsp paprika
  • 1 cup shredded cheddar cheese

Directions

  1. Preheat oven to 350°F.
  2. Cook bacon in a large frypan over medium heat until almost crisp. Drain off all but 2 tbsp fat from frypan.
  3. Add green onions and sauté for 1 minute. Add potatoes, milk, parsley, thyme and paprika; combine with a potato masher. Spoon potato mixture into a greased 8 inch square baking dish. Sprinkle with cheese.
  4. Bake, uncovered, at 350°F until cheese is melted and potato mixture is heated through, about 35 - 40 minutes.
