HERBED MASHED POTATO GRATIN
Ingredients
- 4 slices bacon, julienned
- 1 cup sliced green onions
- 6 cups cold mashed potatoes
- 1/3 cup milk (2%)
- 2 tbsp chopped fresh parsley
- 1/4 tsp thyme, crumbled
- 1/4 tsp paprika
- 1 cup shredded cheddar cheese
Directions
- Preheat oven to 350°F.
- Cook bacon in a large frypan over medium heat until almost crisp. Drain off all but 2 tbsp fat from frypan.
- Add green onions and sauté for 1 minute. Add potatoes, milk, parsley, thyme and paprika; combine with a potato masher. Spoon potato mixture into a greased 8 inch square baking dish. Sprinkle with cheese.
- Bake, uncovered, at 350°F until cheese is melted and potato mixture is heated through, about 35 - 40 minutes.
